SPROUTS & MICROGREENS

Alfalfa can be cultivated to both sprouts and microgreens in your kitchen all year.

NAMES

Alfalfa sprouts and microgreens are also known as Lucerne. The two are the same plant and Latin name for this plant is Medicago sativa.

TASTE

Alfalfa has a very neutral taste like green iceberg lettuce as both sprout and microgreens. The taste is sweeter the more light, you give the plants.

LOOKS

Alfalfa / Lucerne is a fragile looking little sprout. As a mature sprout it is 10 cm long from root tip to leaf top. It is green and white.

NUTRIENTS

Alfalfa sprouts and microgreens contain the nutrients: A, B1, B2, B3, B5, B9, C, K
and Potassium, Iron, Calcium, Copper, Zinc, Magnesium, Phosphorus, Manganese.

EDIBLE PARTS

Alfalfa / Lucerne is a very sustainable plant as both sprout and microgreens. This is because you can eat the whole plant from root tip to the top of the small green leaves.

TIME

Alfalfa sprouts take 6 days from seed to edible sprout. As microgreens they take 14 days from seed to microgreens ready for harvest and serving for your food.

ALFALFA SPROUTS AND MICROGREENS IN RECIPES

I personally love Alfalfa sprouts in everything from smoothies and salads to dips and green topping. Why? Because this neutral tasting plant is easy to mix with all types of salad, vegetables and fruits. They are so easy to match with any taste in a dish – just like iceberg lettuce.

When you dose the seeds, you will soon discover that just a small teaspoon of seeds will give you two big handfuls of sprouts. If you have cultivated too many, they will keep well in the fridge for up to 7 days…or you could use them in your smoothie or fresh juice.
