Greenie smoothie with mung bean sprouts

A PROTEIN RICH GREENIE SMOOTHIE FOR VEGANS, GREEN KETO OR LCHF

 40 g organic mung beans for sprouts
 4 cups fresh spinach
 ¼ fresh cucumber
 1 fresh lemon
 3 chopped almonds
 30 g crushed ice cubes
 3 fresh berries as desired

Soak the mung beans for 12 hours in a glass of cold water. You can tell they have absorbed enough water when the beans are clearly water-tight and smooth on the surface. Then grow them for 1-3 days until they have a 1 cm long, white root. They should not have leaves.
Pour the sprouts into a bowl of water when they are ready to harvest. The water rinses them and loosens the green seed coat. You can either rinse off the seed pods or you can eat the seed pods as well. It is rich in plant fiber for the pleasure of your stomach.

Save a few sprouts and the chopped nuts for decoration. Put all other ingredients in the blender and process until the consistency is as you want it. Pour in more rice milk if desired.
