If you choose to grow the pea shoots from organic peas yourself, then you should use 30 gram of dry peas. Soak them for 8 hours. Afterwards they need to grow in a SproutPearl sprouter for up to two weeks. Rinse them twice a day. They are ready for harvest when the stems are 10-15 cm long.
Combine the pea shoots In a large bowl with crumbled feta cheese, walnuts, red onion, and torn mint leaves.
In a separate small bowl, whisk together the fresh lemon juice, extra-virgin olive oil, salt, and pepper. Adjust the seasoning according to your taste.
Drizzle the dressing over the pea shoot mixture and toss gently to coat all the ingredients evenly.
Let the salad sit for a few minutes to allow the flavors to meld together.
