Ingredients
  

  • 40 g Organic Peas for Pea shoots
  • 1 cup crumbled feta cheese
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, torn
  • 1/4 cup fresh lemon juice
  • 3 tablespoons extra-virgin olive oil
  • Salt and pepper to taste

Instructions
 

  • If you choose to grow the pea shoots from organic peas yourself, then you should use 30 gram of dry peas. Soak them for 8 hours. Afterwards they need to grow in a SproutPearl sprouter for up to two weeks. Rinse them twice a day. They are ready for harvest when the stems are 10-15 cm long.
  • Combine the pea shoots In a large bowl with crumbled feta cheese, walnuts, red onion, and torn mint leaves. In a separate small bowl, whisk together the fresh lemon juice, extra-virgin olive oil, salt, and pepper. Adjust the seasoning according to your taste. Drizzle the dressing over the pea shoot mixture and toss gently to coat all the ingredients evenly. Let the salad sit for a few minutes to allow the flavors to meld together. Serve the Pea Shoot Salad with Feta and Walnuts as a refreshing side dish or a light lunch.
  • Note: You can also add additional ingredients to enhance the flavor and texture of the salad. Consider adding cherry tomatoes, sliced cucumbers, or avocado for extra freshness.
