You can grow many seeds and beans into sprouts. Other groups of bothanical families are also very suitable for sprouting and microgreens.

What Seeds, Beans and Grains can you sprout?

There are more than 40 varieties of seeds, beans, lentils, peas and corn suitable for your sprouting.

Here I will show all those you can find in my webshop.

To find your way around them all, I put them into 5 groups. Each group has their own charateristics that affect how you cultivate them.

They are: 
Seed –  Gelling seed   –   Seeds with hulls  –  Legume – Grain.

The five groups of seeds you can grow into sprouts and microgreens are:

SEEDS

Seeds for Sprouts and Microgreens are harvested from vegetable, salad and herbs. You most often cultilvate this group to sprouts and microgreens with leaves, but some you can harvest with a small root.

GELLING SEEDS

Gelling seeds for sprouts are salad, spice or herb seeds. These seeds form gel, when they get wet. That is why, I also call them mucilaginous sprouting seeds.

You most often cultilvate this group to sprouts and microgreens with leaves, but some you can harvest with a small root.

You can see on all seed bags in my shop, which size each variety is suitable for harvest.

SEEDS WITH HULLS

Seeds with hulls for sprouts are flower or vegetable seeds. These seeds are sold with their hulls intact on the seed. This is because the seed inside i oily and therefore quite fragile.

You always cultilvate this group to sprouts and microgreens with leaves until they are so big, they cast the hulls off the leaves themselves.

You can see on all seed bags in my shop, how long you should cultivate each variety of unhulled seeds before you harvest them.

LEGUMES

Legumes are Beans, Lentils and Peas for sprouts.

Note: As only the below shown varieties have a sufficiently low content of lechtins to be suitable for sprouts, please do not attemp to cultivate hust any legume you may find in your cubboard.

You always cultilvate this group into sprouts with just 1-2 cm long white root. Not until they develop leaves. The only exception to this rule is peas.

GRAIN

Grain is a group that contain both grains and corn.

This group is most often cultivated till they have long, green leaves. You then cut the leaves from the grain or corn and only eat the leaves. Most juice the leaves for wheatgrass as the cellulose in the leaves is hard on the human stomach.

You may also harvest this group when they have developed just a few mm long white root. The sprouts are then soft and nice in salads.

A SPICY DISH FULL OF VEGAN PROTEIN

Green Lentil Sprout Dhal

Course Pot & Oven

Ingredients

  • 1 onion chopped 
  • 1 tbsp olive oil
  • 3 cloves garlic sliced
  • 1 tsp black mustard seeds
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • 1 tsp ground coriander
  • 1/2 tsp chilli flakes
  • 8 Curry leaves
  • 200 g green lentils rinced
  • 750ml water 
  • 150g spinach
  • 3 tbsp coconut yogurt or cream
  • 1 tsp sea salt
  • TOPPING: coconut yogurt or cream
  • TOPPING: sprouts
  • TOPPING: 1 tsp garam masala

Instructions

  • Soak the organic Green lentils for 8 hours in cool water. Pour into sprouter and cultivate for 1-2 days until the white root is ½-1 cm long. Rinse one last time and they are ready.
  • Firstly add the oil to a large frying pan and heat to a medium heat. Add in the mustard seeds. When they start to pop add in the cumin seeds, coriander, turmeric, curry leaves and chilli flakes. Stir for a few seconds then add the onion. Fry for aprox 8-10 minutes on a low to medium heat until soft and browning.
  • Add in the garlic and stir for another few minutes on a low heat.
  • Now add the lentils and water. Simmer for 25 minutes stirring occasionally. Add more water if needed.
  • Blitz the spinach in a food processor until roughly chopped up, now add the spinach, simmer for a further 5 minutes
  • Stir in the coconut yogurt/milk and season well.
  • Top with garam masala, sprouts and more coconut yogurt.

Spinach Lasagna with Lentil Sprouts

Spinach Lasagna with Lentil Sprouts

Course Pot & Oven

Ingredients

  • 40 g red lentils for sprouting
  • 40 g green lentils for sprouting
  • 40 g chick peas for sprouting
  • 600 g frozen spinach leaves
  • 1 small chopped onion
  • 1 clove of garlic
  • 6 cup peeled, canned tomatos
  • 100 g soy or bean pasta
  • 10 g fresh oregano leaves
  • 1/2 cup water
  • 1 cup cheese sause or soy sauce
  • 2 tbsp yeast flakes if you use soy sauce
  • salt and pepper
  • topping cheese if desired

Instructions

  • Sprout your organic chick peas for 4 days untill the root is 3 cm long. Sprout the green and red lentils for 2 days untill the root is 1 cm long. Rince the sprouts when ready and they are set for the dish.
  • Defrost the spinach for 30 minutes in luke warm water. Squeeze it from excess water and it is ready for your dish.
  • Cook the soy pasta in a pot with salt in the water for about 10 minutes. Turn the heat down. Take the pot off the heat and pour away the water. Set the pot back on the stove on the middle warm heat plate. Add the tomato sauce, spinach and soy/cheese sauce.
  • If you have chosen to use soy sauce, you can add yeast flakes to give it a cheesy flavour. Add the spices, onion, garlic and chick pea sprouts and stir the mixture well. Turn up the heat, so the mix will reach boiling for a few minutes.
  • When the mix is done boiling, add the lentil sprouts and the dish is ready to serve. When you add the lentils this late in the cooking process, they will still be crispy. You can add cheese on the top of the dish, if you prefer.
