Fenugreek Microgreens are are nutritious. They contain the vitamins: A, C, B3, B6 and the minerals Potassium, Iron, Calcium, Copper, Magnesium, Zinc, Phosphorus, Manganese, Sodium. This variety of Fenugreek has the Latin name Trigonella foenum-graecum. Fenugreek is also called: Greek Clover, Greek Hay, Alholva, Bird’s Foot, Bockshornklee, Bockshornsame.
A scent of curry from Fenugreek
I recommend that you eat your Fenugreek at a time, when you do not have engagements the next day that make you to sweat. This is because Fenugreek seeds and young fenugreek sprouts can tend to make your body carry a scent of curry. This is no problem unless you prefer to be odourless on that special day.
Use in food
Fenugreek is a very unique plant in that you can eat it on many stages of the cultivation. As sprouted seeds with just a small root they have a very strong curry taste and scent. many use these in tea.
As a sprout with only the small set of leaves unfolded and green, their curry scent is almost gone but it is still there when you eat the plants. As microgreens your Fenugreek is a great salad substitution with just a hint of curry.
Because of the unique curry scent and taste, I like to use my Fenugreek plants in sandwiches, green salads and wraps. I do not enjoy them in smoothies or juices where I prefer the more neutral tasting Sunflower or the very neutral Alfalfa.
Cultivation time of organic Fenugreek seeds for Microgreens
You can grow your organic Fenugreek seeds into either sprouts or microgreens. If your kitchen temperature is 18-23 ° C / 64-73 ° F, your Fenugreek sprouts should be ready for harvest after 6 days of cultivation. At the same temperature, they should have grown to mature microgreens after a total of 12 days.
